Quinoa with greens and apricots is a vibrant combination of freshness and gentle sweetness embodied in European cuisine. Light, nutritious, and rich in vitamins, this unusual mix of quinoa, greens, and apricots creates a balance between the refreshing tartness of lemon, crunchy pine nuts, and aromatic herbs. Quinoa, long valued for its nutrition, meets sweet dried apricots in this dish that reveal their fruity richness after gentle steaming. Lemon zest adds a special freshness to the dish while mint and parsley complement it with their spicy notes. Quinoa with greens and apricots is perfect as a light side dish for fish or chicken but can also serve as a standalone dish for healthy eating.
