Halloumi cheese is a traditional Cypriot delicacy that is perfect for baking due to its dense texture. In this recipe, its golden crust pairs with the rich flavor of sweet roasted peppers, while thyme and lemon add a fresh zest. Baked together, these ingredients create a harmony of tenderness and aroma. Served on a bed of soft spinach and soaked in roasting juices, halloumi becomes even juicier. Crispy bread completes the picture, allowing you to fully enjoy each flavor. The dish is ideal for a light dinner or Mediterranean-style appetizer, filling the meal with a sunny atmosphere and subtle hints of fresh herbs.
