Puff pastry with cheese and chili is a refined dish embodying European culinary traditions. It combines a crispy golden crust and creamy goat cheese with a spicy hint of chili paste. Basil and parsley add freshness, highlighting the depth of flavor. Historically, puff pastry was valued for its airy texture, and in this recipe, it becomes an elegant frame for the spicy cheese. The baked 'sandwich' is perfect as an appetizer or light dish, especially when paired with a crunchy green salad and spicy dressing. This recipe is a true celebration of flavor contrasts that will delight gourmets and lovers of unusual gastronomic solutions.

1
Preheat the oven to 200 C. Cut the cheese horizontally in half to make 4 rounds, spread 1 tbsp of chili paste on 2 of them, add herbs. Cover with the remaining cheese.
- Goat cheese: 200 g
- Chili paste: 2 tablespoons
- Chopped parsley: 1 tablespoon
- Crushed basil leaves: 1 tablespoon
2
Place the resulting cheese 'sandwiches' on rolled dough of 1 cm thickness and cut the dough around, leaving 1 cm from the cheese.
- Puff pastry: 1 piece
3
Cut out 2 more circles with a diameter twice as large as the first ones. Brush the dough around the cheese with egg, then cover the cheese with the larger cut-out circles; pinch the dough around the cheese.
- Chicken egg: 1 piece
4
Use a knife to make cross cuts on the dough without cutting through, brush with egg, and bake on a tray for 30 minutes until golden brown.
5
Serve with a green salad with a spicy dressing.
- Green salad: to taste
