Wash the chicken body and thoroughly dry it with a paper towel.

For the marinade: mix 2 tablespoons of honey with 4 tablespoons of mustard in a bowl. (You can add a little vinegar). Place the chicken in the mixture, dip it in the marinade on all sides and inside, and put it in the refrigerator to marinate. Ideally for at least two hours.

Preheat the oven to 180 degrees. It's better to place the chicken on a rack. Place a tray or flat container with water underneath. Cooking time depends on the weight of the bird. (1 kg - 1 hour). While it cooks, baste with juice from the tray on top. This will make the meat very juicy.
