Rub the chicken with a large amount of salt and black pepper, wrap it in plastic wrap, and put it in the fridge. It's best to do this in the morning for juicy and flavorful chicken.

Cut the potato into 4 pieces. Separate the garlic into cloves.

Put potatoes, lemon, and garlic in a pot with plenty of boiling salted water and cook for 12 minutes.

Then drain the water and let the potatoes dry for 1 minute over the heat, shaking the pot constantly to make them crispy. Then remove the lemon and garlic. Cover the pot to keep the potatoes hot.

Preheat the oven to 190 C.

While the lemon is hot, pierce it about 10 times. Take the chicken out of the fridge, pat it dry with a paper towel, and rub it with olive oil.

Place lemon, garlic, and thyme inside the chicken, then put the chicken in a deep baking dish and cook in a preheated oven for 45 minutes.

Transfer the chicken to a plate. Place the potatoes with rosemary leaves on the baking sheet and mix.

Make a depression in the center and place the chicken there. If using bacon, lay it on the breast, put the chicken in the oven, and cook for another 45 minutes or until the chicken is done and the potatoes are browned.
