Kurnik is a traditional Russian pie symbolizing family warmth and festive gatherings. Its history dates back centuries when it was an integral part of wedding feasts. This recipe combines three fillings: tender chicken, fragrant mushrooms, and nutritious rice, each covered with thin pancakes that give the pie a special layered texture. The dough is airy and crispy, framing the filling and creating a harmony of flavors – from creamy tenderness to the light spiciness of fresh herbs. The pie is baked to a golden crust and acquires a rich, appetizing aroma. Boil the eggs, chicken, and rice separately. Save a cup of chicken broth, we will need it. Thaw the dough.
- Chicken egg: 3 pieces
- Chicken breast fillet: 2 pieces
- Rice: 1 glass
- Chicken broth: 1 glass
- Yeast puff pastry: 500 g

Fry several pancakes according to your recipe. The pancakes should be of normal thickness and not sweet.
- Pancakes: 6 pieces

Chicken filling: Cut boiled chicken fillet or shred it. In a pan, lightly fry 1 tbsp of flour until nutty aroma appears, add a cup of broth, season with salt and pepper, and stir until thickened, then add chicken and chopped cilantro or parsley.
- Chicken breast fillet: 2 pieces
- Wheat flour: 1 tablespoon
- Chicken broth: 1 glass
- Fresh cilantro (coriander): 1 bunch

Mix boiled rice with green onions and chopped eggs, adding a little salt.
- Rice: 1 glass
- Green onion feathers: 1 bunch
- Chicken egg: 3 pieces

Mushroom filling: Sauté 1 onion in a pan, add chopped mushrooms and fry. Closer to readiness, stir in 3 tablespoons of sour cream.
- Onion: 1 head
- Mushrooms: 300 g
- Sour cream 20%: 3 tablespoons

We start assembling the pie: Roll out the fully thawed dough, we need a circle shape 2-3 cm larger in diameter than the pancakes, so the seam is above the bottom level and the pie holds its shape. Transfer to a baking sheet lined with greased parchment paper.
- Yeast puff pastry: 500 g

First layer rice filling, then a pancake on top. Layer different fillings with pancakes, cover the top layer with dough and pinch it. Decorate the pie.

Bake for 40-50 minutes at 180 degrees. Remove from the oven, cover with a towel, and let it sit.
