In a medium pot, mix chicken fat and skin.
- Chicken fat with skin: 300 g

Pour in water. Bring to a boil, then reduce the heat and continue cooking for about 50 minutes.

Stir constantly until the fat melts, the water evaporates, and the pieces of skin and fat shrink in size, turn golden, and become crispy.

Add the onion and sauté for about 10 minutes, stirring constantly, until light golden color forms.

Strain the melted chicken fat through a sieve. If necessary, use the remaining chicken skin, fat, and onion as a snack by salting them, or mix with the liver.
