Soak the pork in cold water and let it sit for 3-4 days. Change the water daily.

Preheat the oven to 180 degrees. Drain the water from the pork and pat it dry with paper towels. Make shallow cuts in the pork skin. Place the pork skin side up in a large ovenproof pan.

In a small bowl, mix sugar, mustard, and 1/4 cup of water. Rub the pork with the mixture, stuffing cloves into the cuts made in the skin with a knife beforehand. Pour a little water into the pan to cover the bottom and bake. To calculate the time, use the following formula: for every 500 g, 15 minutes are needed. Thus, a 5 kg piece of pork should be baked for 150 minutes.

- Carnation: 5 tablespoon
