Squid cutlets

4 servings

25 minutes

Squid cutlets are a refined dish of Pan-Asian cuisine, combining the tenderness of seafood and the lightness of an airy texture. The recipe's origins stem from traditional Asian methods of processing squid, where their natural flavor and softness are valued. Quick thermal processing helps squid retain their juiciness, while the addition of greens and semolina makes the cutlets more structured and aromatic. Whipped egg whites give the dish lightness and porosity, while the breading adds a crispy crust. These cutlets pair wonderfully with fresh salads, soy sauces, or spicy dips. Ideal as an appetizer or main course, they offer gastronomic delight and reveal new flavor dimensions of Pan-Asian cuisine.

Cooking steps
  • 1

We cut the frozen unpeeled squid with scissors or a knife.

  • 2

Boil water in a pot. Dip the unthawed squid in boiling water one by one for 5-7 seconds.

  • 3

We remove the skin from the squid. If it's not possible to remove all the skin, it's okay. We rinse and remove any remaining skin.

  • 4

We cut the squid bodies into pieces and then chop them with a blender. This results in a sticky mass that is easy to shape into patties. We add chopped green onions and semolina. The onion can be replaced with any greens you like. You can also do without greens, but it's more fun with them.

    Required ingredients:
    1. Green onions1 stem
    2. Semolina2 tablespoons
    3. Salt to taste
    4. Ground black pepper to taste
  • 5

We separate the egg whites from the yolks. We beat the whites with the same blender until foam forms. The yolks are not used in this recipe.

    Required ingredients:
    1. Chicken egg2 pieces
  • 6

Season the minced meat with salt and pepper, add the beaten egg white, and mix.

    Required ingredients:
    1. Salt to taste
    2. Ground black pepper to taste
    3. Chicken egg2 pieces
  • 7

Pour a little vegetable oil into the pan and heat it up.

  • 8

With wet hands, shape the patty, coat it in breadcrumbs, and immediately place it in the heated pan.

    Required ingredients:
    1. Breadcrumbs1 glass
  • 9

Fry for 2-3 minutes on each side. Then reduce the heat to low, cover with a lid, and wait for another 3 minutes. That's it.

  • 10

You get tender, airy cutlets. Choose a side dish as you wish. Enjoy your meal.
