Heat 1⁄4 cup of oil in a large skillet over high heat. Add the mushroom stems and sauté for 2-3 minutes, stirring, until golden brown. Add dried shiitake and 1 cup of water and bring to a boil. Reduce heat to medium, cover, and simmer for 1 hour.
- Vegetable oil: 0.3 glass
- Shiitake mushrooms: 450 g
- Dried Shiitake Mushrooms: 0.8 glass

Strain the broth through a fine sieve into a bowl, let it cool; discard the solids. Pour in the remaining 2 tbsp of oil and add the mushroom caps. Cover and let sit at room temperature for 2 hours.

Prepare the grill. (You can also heat a cast-iron skillet over medium heat.) Remove the mushroom caps from the marinade and grill them, face down, until lightly charred, about 6 minutes. Flip and grill until tender, 1-2 minutes.
