Preparing a rub for pork. In a small bowl, mix paprika, brown sugar, 1 tbsp salt, mustard, garlic powder, 1 tsp black pepper, white pepper, and 1 tsp cayenne pepper. Rub the mixture onto the meat and let it sit for an hour at room temperature.
- Sweet paprika: 4 teaspoons
- Brown sugar: 1 tablespoon
- Salt: 4 teaspoons
- Dry mustard: 1 teaspoon
- Ground dried garlic: 1 teaspoon
- Ground black pepper: 1 teaspoon
- Ground white pepper: 1 teaspoon
- Ground cayenne pepper: 1 teaspoon
- Pork shoulder: 3 kg

Prepare the sauce. Place a saucepan over medium heat and mix ketchup, vinegar, sugar, salt, 2 1/2 tsp black pepper and 1 1/2 tsp cayenne pepper. Pour in 2 cups of water, bring to a boil, reduce heat and cook for about 15 minutes while stirring until thickened. Let the sauce cool.
- Ketchup: 3 glasss
- Apple cider vinegar: 2 glasss
- Sugar: 2 glasss
- Salt: 4 teaspoons
- Ground black pepper: 1 teaspoon
- Ground cayenne pepper: 1 teaspoon
- Water: 2 glasss

Preheat the grill. Cook the pork on the grill for 4-6 hours. Place the cooked pork on a plate, let it cool for 20 minutes, slice it, and remove the bones. Mix the meat with 1.5 cups of sauce and serve with the remaining sauce. Enjoy your meal!
