In a saucepan, heat olive oil over low heat. Sauté finely chopped onion and garlic until translucent and let them cool. Chop the mushrooms and sauté.
- Olive oil: 3 tablespoons
- Onion: 2 heads
- Garlic: 2 cloves
- Mushrooms: 100 g

Preheat the oven to 180 degrees. In a large bowl, mix the minced meat, 2 tbsp of ketchup, sherry, sautéed mushrooms, egg, and breadcrumbs. Season with salt and pepper, and add half of the sautéed onion with garlic.
- Ground meat: 1.5 kg
- Ketchup: 5 tablespoon
- Dry sherry: 1 glass
- Mushrooms: 100 g
- Chicken egg: 1 piece
- Breadcrumbs: 200 g
- Salt: to taste
- Ground black pepper: to taste
- Onion: 2 heads
- Garlic: 2 cloves

Place the mixture in a baking dish and form a roll. Sprinkle with the remaining fried onions and garlic, and brush with the remaining ketchup. Bake for 45 minutes. Remove the finished roll from the oven, let it 'rest' for 10 minutes, and slice.
