Corned beef with fried eggs

Cut the piece of meat lengthwise with a sharp knife, then cut each half into 4 pieces. Dice each piece into 1 cm cubes and transfer to a bowl. In a cup, mix Worcestershire sauce and mustard, pour over the meat, and mix.
- Corned beef: 200 g
- Worcestershire sauce: 2 tablespoons
- Grainy mustard: 1 teaspoon

Clean the onion and cut it in half, thinly slice into half-rings. Wash the potatoes and cut them into 1 cm cubes without peeling. Place in a pot, cover with boiling water, add salt, cover with a lid and cook for 5 minutes. Transfer to a colander and cover with a towel to absorb the steam.
- Onion: 1 head
- Potato: 275 g
- Salt: to taste

Then heat 2 tablespoons of oil in a pan until it smokes, add chopped onion, stir, and sauté for 3 minutes until golden brown over high heat. Push the onion to one side of the pan, turn the heat to very high, add the potatoes, and brown them while stirring. Add more oil if necessary. Season with salt and pepper, and mix everything with a spatula.

After 6 minutes, add the beef, stir, and cook for another 3 minutes to heat the meat well.

Reduce the heat to a minimum. Fry the eggs in a small pan.
