Boil and rinse the noodles. Chop the cilantro.
- Rice noodles: 150 g
- Coriander: 1 bunch

Prepare all the vegetables and sauce in advance, as they need to be added to the pan literally one after another and fried for about 5-7 minutes. Slice the mushrooms, cut the bell pepper into thin strips, remove the seeds from the chili and slice it thinly, and cut the zucchini into matchsticks (you can use a special grater). Peel the ginger and chop it finely. Peel the garlic and prepare the garlic press.
- Fresh champignons: 250 g
- Sweet pepper: 1 piece
- Chili pepper: 1 piece
- Zucchini: 0.5 piece
- Ginger: 100 g
- Garlic: 3 cloves

Pour soy sauce, oyster sauce, rice vinegar into a bowl and add sugar. Mix well with a fork. Add starch and mix.
- Soy sauce: 6 tablespoons
- Oyster sauce: 2 tablespoons
- Rice vinegar: 1 tablespoon
- Brown sugar: 1 tablespoon
- Starch: 2 teaspoons

Heat vegetable oil in a pan, you can add sesame oil. Add ginger and squeeze in garlic. Sauté for about 30 seconds. Keep the heat slightly above medium.

- Ginger: 100 g
- Garlic: 3 cloves

5. Next, we add the remaining ingredients step by step and fry each for 30 seconds: pour in the sauce (30 sec), add the peppers (30 sec), mushrooms, zucchini, sesame (you got it).

- Zucchini: 0.5 piece
- Sesame: 2 tablespoons

We mix in the noodles, sprinkle with cilantro, and turn off.
