Clean the fish, gut it, wash it, remove the head and tail. Carefully take out the spine without damaging the skin on the back. Open the fillet like a book.

Place the salmon fillet skin-side down on a greased baking sheet. Season the fish with salt and pepper, drizzle with lemon juice, and brush with softened butter.
