Baked tilapia fillet with mayonnaise is a dish that embodies the coziness of Russian cuisine. Easy to prepare, it combines the tenderness of fish with the rich creamy texture of a topping made from cheese, mayonnaise, and garlic. Tilapia has a mild flavor and remains juicy while absorbing the aroma of spices when baked. The melted cheese forms an appetizing crust while garlic adds zest. It is perfect for both family dinners and festive tables, pairing well with light sides like vegetables or mashed potatoes. This dish beautifully highlights the tradition of baking fish in Russian cooking, making it rich yet accessible and convenient to prepare.

1
Rinse the fillet, dry it. Rub with spices on both sides, let it sit for 10-15 minutes. I use a mix of spices for fish.

Prepare the 'cap' by mixing mayonnaise, cheese, and garlic in a separate bowl.
- Mayonnaise: 50 g
- Grated cheese: 150 g
- Garlic: 5 clove

Lay foil on the baking tray, leaving some to cover the fillet on top, and grease it with oil. Place the fillet in the dish, cover with foil, and put it in a preheated oven at 195°C for 15 minutes.
- Olive oil: 1 tablespoon

After 15 minutes, uncover the foil, place a 'cap' on the fillet, and put it back for another 10-15 minutes until the cheese melts and browns. Covering with foil is not necessary.
