Pork with vegetables and millet in Balkan style is a fragrant and rich dish of Bulgarian cuisine that embodies the coziness and warmth of traditional family gatherings. Tender pieces of pork, carefully fried to a golden crust, are filled with the flavors of juicy vegetables: carrots, sweet peppers, and young green beans. The addition of tomatoes and soy sauce gives the dish a rich palette of flavors with a slight tanginess and depth of spices. The special Balkan character is imparted by Shopska salt, which includes aromatic herbs and spices, giving the dish an authentic touch. A garnish of fluffy millet harmoniously complements the dish, creating a balance of textures and flavors. Cut the pork into small pieces, 1-2 cm thick. I prefer lean cuts of pork, such as loin or bone-in chop. Dice the vegetables.

Fry the pork in a thick-bottomed pan or skillet in vegetable oil for about 10 minutes.

Add onion and fry for another 5 minutes. Then add the chopped vegetables in order, continuing to fry while stirring for 10 minutes. Add in this order: carrot, bell pepper, green beans.

Add tomatoes, soy sauce, and spices. Mix, cover with a lid, reduce the heat, and let it simmer for another 10 minutes.

Shop salt gives a special Balkan flavor to the dish, I brought it from Bulgaria. You can prepare it yourself: paprika, red and black ground pepper make up at least half of the mixture. A quarter is thyme (available in stores), a quarter is fine sea salt, and a bit of cumin seeds. The recipe requires 1 tablespoon of prepared salt.

Boil millet as a side dish. I used portioned packets, very convenient (cooking for 15 minutes).
