To prepare the Spanish side dish called 'Mojete', first clean and wash the potatoes. Slice them into thin rounds and fry in vegetable oil.
- Potato: 4 pieces
- Vegetable oil: to taste

Place the fried potatoes in an oven-safe dish (but don't put it in the oven yet). Now we fry the onion and garlic, adding sliced or chopped tomatoes to them (I also add chopped carrots for flavor, which adds sweet notes to this symphony of taste).
- Onion: 1 head
- Garlic: 2 cloves
- Tomatoes: 2 pieces
- Carrot: to taste

Fry everything together for about five minutes, season with spices (salt, pepper, curry, bay leaf), and place the tomatoes and onions on top of the potatoes.

Pour the beaten egg over the products and place the dish in a preheated oven for about 5 minutes until the egg sets.
