Fish Muffins

Can Italian cuisine be inexpensive? Of course it is! As proof, I give you a recipe for capelin (sardines, Italy) and zucchini (zucchini, Italy) muffins, hard cheese (it's up to you, in my case it's domestic parmesan , may the culinary gods forgive me).

We take fresh sprats – 30 pieces, clean them from heads, entrails, and bones using scissors. We cut young zucchini into small cubes and boil them in salted water for 10 minutes.
- Capelin: 800 g
- Young zucchini: 200 g

In muffin molds (preferably silicone), place 5 pieces of sprat at the bottom, which should be dipped in sunflower oil (olive oil, not all from Italy) and coated with breadcrumbs. Then add some grated cheese and then zucchini. Close the muffin with the ends of the fish. Sprinkle with breadcrumbs and grated cheese on top.
- Capelin: 800 g
- Vegetable oil: 50 ml
- Breadcrumbs: 100 g
- Hard cheese: 100 g
- Young zucchini: 200 g
- Breadcrumbs: 100 g

Bake at 200 degrees for 15-20 minutes. That's it, done! The taste is fantastic!! The combination of crispy fish with croutons, slightly stewed fragrant zucchini, and soft melted cheese.
