First, we fry the white mushrooms until golden brown.
- White mushrooms: 150 g

Sauté onion and spelt in olive oil, add red wine and let it evaporate. Then add chicken broth. Cook everything together, stirring constantly, for about 25 minutes.
- Red onion: 30 g
- Spelt: 150 g
- Red wine: 50 ml
- Chicken broth: 300 ml
- Olive oil: 20 ml

When everything is ready, add butter, sautéed white mushrooms, parmesan, and pecorino. Mix well. Done!
