Chicken roll with baked vegetables is a refined dish of European cuisine that combines the tenderness of chicken meat and the aroma of baked vegetables. The origins of such a roll trace back to traditional home cooking recipes where meat is enriched with fillings that enhance its flavor. First, take the chicken breast and cut it into 4 nice pieces. Take each piece and pound it with a kitchen mallet to a thickness of about 0.5-1 cm. Season each pounded piece with salt, pepper, and garlic on both sides. At the beginning of each piece, place grated goat cheese (hard variety), a piece of butter, and herbs to taste (I added cilantro because I love it). Now you can roll each piece into a roll. Place the rolls on an olive oil-greased baking sheet and cover them with foil; bake in the oven at 180 degrees until cooked.

Meanwhile, we clean the potatoes and beets. We cut them into cubes or wedges of any shape (as you like), slice the onion into half rings, take all the vegetables and place them on a baking sheet, drizzle with olive oil, season with salt and pepper to taste, and if desired, you can drizzle them lightly with balsamic vinegar, but since I didn't have it nearby, I added a bit of Worcestershire sauce (I love it and add it wherever I can). I cover the vegetables with foil and bake them in the oven until done.
