Lenten manti with pumpkin

Lenten manti with pumpkin are delicate, aromatic dumplings filled with the sweetness of pumpkin and a light hint of butter. This recipe embodies the traditions of a simple yet exquisite European lenten table. Manti is a dish widely spread in Central Asia, but variations can be found in different cuisines around the world. The uniqueness of this recipe lies in its minimalism of ingredients that allows the natural flavor of pumpkin to shine through. The dough made without eggs becomes elastic and soft, while the filling remains juicy due to steaming. Such manti can be served with spicy herbs or a light sauce based on vegetable oil, making them ideal for lenten meals. This dish is not only filling but also nutritious, rich in vitamins that provide energy and comfort during autumn-winter evenings.

1
Pour the flour into a pot or salad bowl and make a well in the flour for water.
- Wheat flour: 250 g
2
Pour in room temperature salted water and mix the flour with water to make dough.
- Water: 150 ml
- Salt: pinch
3
Roll the obtained dough into a ball and leave it in a salad bowl/pot for 20 minutes, covering the container with plastic wrap (to prevent air from entering).
4
During this time, cut the pumpkin into small cubes, place them in another container, and add a little salt. Clean the pumpkin and remove the seeds beforehand.
- Butternut Squash: 500 g
- Salt: pinch
5
Roll out the dough into a thin layer and cut out circles of the desired size (you can use a large glass or mug). Shape the manti by placing a bit of chopped pumpkin and a small piece of butter inside each (if you are not on strict fasting). I put a piece of butter the size of a pumpkin cube.
- Butternut Squash: 500 g
- Butter: to taste

Steam the manti for about 40 minutes. I don't have a steamer, so I take a large pot and pour water at the bottom. I place a greased (with butter or vegetable oil) colander in the pot. I put the manti in the colander and cover it with a lid. In a steamer, the manti might cook faster.
- Butter: to taste
