Fish nests are an exquisite dish of European cuisine that combines the tenderness of sea fish with the lightness of a bread base. This recipe stems from the tradition of transforming simple ingredients into a gastronomic masterpiece. Tender fillets of pike perch or pink salmon infused with the aromas of onion and herbs are placed in soft indentations of a baguette, creating a visual resemblance to a cozy nest. Baked to a golden crust with mayonnaise and cheese, the nests acquire an appetizing texture: crispy on the outside and juicy on the inside. An ideal option for a cozy dinner or festive table, these nests surprise with their balance of flavors—from the creamy softness of cheese to the slight spiciness of spices. Chop the onion finely.
- Onion: 200 g

Finely chop the fish fillet (pike perch, pink salmon, pollock, etc.).
- Fish fillet: 500 g

Chop the greens finely.
- Green: 1 bunch

Grate the cheese on a fine grater.
- Cheese: 150 g

Mix fish, onion, herbs, add salt and pepper.
- Salt: to taste
- Ground black pepper: to taste

Cut the loaf into pieces 2 cm thick.
- French baguette: 400 g

Soak pieces of the baguette in milk and squeeze out a little.
- Milk: 500 ml

Grease the mold with oil, place the pieces.

Make an indentation in each piece, just press the dough with your hands.

Place the fish with onions in the hollows.
- Fish fillet: 500 g
- Onion: 200 g

Spread with mayonnaise.
- Mayonnaise: to taste

Put in the oven.

Bake at 180 degrees for 40-45 minutes. Then sprinkle with cheese (I sprinkled half with cheese, half without), and put in the oven for another 5-7 minutes.
