We zest the lime, chop the parsley, and slice the garlic thinly.

Grate the ginger root.

Cut the chili pepper in half lengthwise and slice it into strips crosswise. You can leave the seeds in the marinade if you want it spicier.

We put zest, garlic, ginger, parsley, and pepper in a mortar and grind them well into a paste.

Then we squeeze lime juice in, add olive oil, salt, black pepper and mix. The marinade is ready.

We cut the pork into 4 chops on the bone. We rub the chops with marinade and place them in a container to marinate for about 40-45 minutes. It's better to cover the container with plastic wrap.

Heat a little vegetable oil in a thick-walled pan to just above medium temperature.

Remove large pieces of marinade from the cutlets to prevent burning, and fry on both sides until golden brown, about 2 minutes on each side.
