Pie "Julien"

60 minutes
The 'Julien' pie is an exquisite combination of crispy shortcrust pastry and a delicate creamy filling with chicken, mushrooms, and cheese. The recipe is inspired by French cuisine, where 'julien' traditionally means thinly sliced ingredients. Here it takes the form of a pie while maintaining elegance and richness of flavors. The tender dough creates the perfect base for the juicy filling, and the baked cheese crust adds an appetizing golden hue. This pie can be served as a festive dish or as a cozy home dinner, perfectly paired with a glass of white wine or a fresh salad. It is ideal for those who appreciate the harmony of textures and flavors—the tenderness of mushrooms, juiciness of chicken, and creaminess of the sauce. The 'Julien' pie is a cozy gastronomic journey with a French accent that delivers true pleasure.

1
For the test: cut a pack of butter into cubes, add 1 egg, salt, sugar, gradually introduce sifted flour, mix everything by hand until a homogeneous mass is obtained. The dough should easily come off your hands; if not, add a little more flour to achieve this effect.
- Butter: 180 g
- Chicken egg: 1 piece
- Salt: pinch
- Sugar: 1 tablespoon
- Wheat flour: 250 g
2
Shape a ball from the mass with your hand, wrap it in plastic wrap, and place it in the refrigerator for 20-30 minutes;
3
Turn on the oven (temperature 200 degrees);
4
While the dough is in the fridge, prepare the filling. Cut the chicken breast into small pieces and the onion into rings. Sauté the onion and chicken pieces in a little oil. After about 5 minutes, add the chopped mushrooms in large pieces. Simmer for another 5 minutes. Then add sour cream. You can season with salt and pepper to taste. Cook until the sour cream evaporates, stirring constantly. When the sour cream evaporates, add dill and simmer the filling for another minute.
- Chicken breast: 1 piece
- Onion: 1 piece
- Fresh champignons: 200 g
- Sour cream 15%: 300 g
- Ground black pepper: to taste
- Salt: pinch
- Dill: 20 g

Place baking paper in the baking dish so that its edges stick out (it will be convenient to transfer from the dish to the plate later). Grease the paper with butter if it is not silicone. Place the dough in the dish, making high edges. Prick the bottom of the dough all over with a fork to prevent air bubbles from forming inside. Place in a preheated oven at 200 degrees for 10 minutes;
6
Grate the cheese on a coarse grater.
- Hard cheese: 50 g
7
After 10 minutes, take the prepared dough out of the oven, add the filling, and sprinkle grated cheese on top. Place the pie back in the oven for another 10 minutes until a golden cheese crust forms;
8
When the pie is ready, take it by the edges of the paper and carefully transfer it to a plate, trim any excess paper edges. Enjoy your meal!
