Pork baked with mushrooms and tomatoes

6 servings

60 minutes

Pork baked with mushrooms and tomatoes is a dish that delights with its rich flavor and appetizing aroma. The perfect combination of tender meat, juicy mushrooms, and sweet tomatoes creates a harmony of tastes that unfolds during baking. The homeland of such meat casseroles can be considered European cuisine, where natural spices and fresh products are traditionally used to achieve a balance of flavors. The oven-cooked meat remains juicy thanks to the tomatoes, while the mushrooms add depth and richness to the dish. The finishing touch is melted cheese that forms a golden crust, making the dish not only tasty but also aesthetically pleasing. This treat is perfect for a cozy family dinner or festive table, especially when paired with a glass of red wine and fresh herbs.

We separate the mushroom caps from the stems and cut them in half to make two circles from each mushroom. In butter, we fry the mushroom caps on both sides over high heat for a couple of minutes until a light golden crust forms. This will evaporate some moisture from the mushroom and enhance the flavor. We remove them to a plate. We finely chop the remaining mushroom stems and fry them together with onions in butter.

    1. Fresh champignons200 g
    2. Butter1 tablespoon
