Clean the sea bass and remove the entrails, then dry the belly well with a paper towel.

Place on a paper towel and pat dry with another paper towel so the fish is dry.

Place a few sprigs of fresh thyme and a piece of lime inside each fish.
- Fresh thyme: 1 bunch
- Lime: 1 piece

Make shallow longitudinal cuts on the fish every 1.5–2 cm, rub the fish with salt and pepper, and place it on a greased baking tray or dish.
