Wash the rice, place it in a pot, and cover with hot water in a 1:2 ratio. Bring to a boil over medium heat, add salt, then reduce the heat to low and cook covered until done.

Peel the zucchini and cut it into cubes. Start frying in a pan with oil.

When the zucchini are almost ready, dice the tomatoes and add them to the pan. Season with salt and pepper. Fry until cooked.
