Potato 'Harmoshka' with sour cream sauce is a fragrant and hearty dish from Russian cuisine, where potatoes have long been considered one of the main ingredients. The special cutting method allows the potato to open up like an accordion, letting the fat from smoked bacon penetrate inside, making it tender and rich. The sauce made of sour cream, onions, and herbs gives the dish a creamy texture and zest. This dish is perfect for a cozy home dinner, creating an atmosphere of warmth and care, especially on cool days. It is easy to prepare and has a memorable taste with a crispy crust and soft center complemented by aromatic notes of garlic and herbs.

1
Make cross cuts in the potato, but do not cut all the way through. It's convenient to do this on a plate with edges that prevent the knife from going all the way down.
- New potatoes: 2 pieces
2
Cut the fat into thin slices. Insert the fat into the cuts.
- Smoked lard: 50 g
3
Place the potatoes in a preheated oven at 200 degrees and meanwhile prepare the sauce.
4
Chop the onion, greens, and garlic finely, fry in a pan with oil or lard. Mix with sour cream - this is our sauce.
- Onion: 1 piece
- Garlic: to taste
- Sour cream: 2 tablespoons
5
Take the potatoes out of the oven, drizzle with sauce, and put them back to bake.
- Sour cream: 2 tablespoons
