Khachapuri made from homemade puff pastry is a true embodiment of Georgian culinary soul. The flaky, tender dough soaked in butter combined with the aromatic filling of Adyghe cheese, cottage cheese, and sulguni creates a rich and intense flavor. This dish is not just a treat but a symbol of hospitality, warmth, and family traditions. Historically, khachapuri is Georgia's calling card, reflecting its love for hearty and fragrant baked goods. Served hot and brushed with butter, it is perfect for cozy evenings or festive gatherings. It is especially delightful to enjoy with a cup of tea or a glass of dry wine. The crispy crust and gooey cheese inside turn each bite into a true gastronomic pleasure that can enchant anyone.

1
First, we make the dough: dissolve the yeast in milk, add salt and pepper, then gradually add the egg and flour. We knead the dough.
- Milk: 250 ml
- Dry yeast: 1 teaspoon
- Salt: to taste
- Chicken egg: 1 piece
- Wheat flour: 3 glasss
2
Roll out the dough, grease with butter, and roll into a log. Twist the log into a rope. Leave for 30 minutes.
- Butter: 180 g

Now for the filling: chop the greens. Mix the cottage cheese, Adyghe cheese, and suluguni well with the greens. Also add the second egg - only the white. The yolk will be needed for greasing the flatbreads.
- Parsley: to taste
- Cottage cheese: 180 g
- Suluguni cheese: 120 g
- Adyghe cheese: 280 g
- Chicken egg: 1 piece

Now we need to make small flatbreads from the dough, into which we place the filling. We fold the edges of the flatbread towards the center. We roll it out carefully.
5
Place on a baking sheet and bake our khachapuri at 200 degrees for 15-20 minutes. Let the finished flatbreads cool and serve them brushed with butter.
