Okroshka on whey is a traditional Russian summer dish that is refreshing and light. Its history dates back to ancient times when peasants mixed simple ingredients to create a nutritious yet cool soup in the heat. Whey as a base gives okroshka a slight tanginess that highlights the tenderness of potatoes, the spiciness of radishes, and the freshness of cucumbers. Sausage adds heartiness while herbs complete the aromatic harmony. Kefir and mineral water make the texture airy and rich. Okroshka can be served with rye bread, and dill and parsley enhance its aroma. This soup is a true find for hot days, providing vigor and pleasure. Cold, slightly sour with crunchy vegetables—it perfectly refreshes and fills each summer day with flavor.
