Tian, also known as ratatouille, is a vibrant and aromatic dish from French cuisine originating in Provence. It delights with the simplicity and rich flavor of fresh vegetables baked in olive oil and fragrant herbs. Eggplant, zucchini, tomatoes, and red onion are sliced into thin rounds and carefully layered to create a picturesque palette of colors. Baking gives the vegetables softness and richness while garlic and thyme add subtle spicy notes. Tian can be served as a standalone dish or as a side to meat and fish. Its lightness and naturalness make it an ideal choice for a summer lunch or dinner. Traditionally prepared in a ceramic dish that helps evenly distribute heat and retain the juiciness of the vegetables.
