Cut the turkey fillet into small pieces.
- Turkey fillet: 500 g

Chop the garlic, ginger, and chili, and put them in a blender or mortar.
- Garlic: 2 cloves
- Ginger root: 1 piece
- Chili pepper: to taste

Toast coriander and cumin seeds in a dry, heated pan over low heat for 2 minutes, shaking occasionally.
- Coriander seeds: 1 tablespoon
- Cumin seeds (jeera): 1 tablespoon

Add the roasted seeds to a blender or mortar, add paprika and chili (optional), and grind everything together into a paste.
- Paprika: 2 teaspoons
- Chili pepper: to taste

Add yogurt and softened butter to the prepared paste, and mix into a homogeneous paste using a mixer or food processor. It's important to achieve a completely uniform paste consistency for the marinade. This can be done with a mortar, as Thais manage it, but it requires patience. I recommend a food processor or blender.
- Yogurt: 120 g
- Melted butter: 2 g

Place the turkey fillet in a plastic container and pour the marinade over it. Close the lid and let it marinate in the refrigerator for 4 hours to overnight.

Preheat the oven to 180 degrees.

Soak wooden skewers in water for 10 minutes to prevent them from burning.

Skewer the turkey on them, place the wooden skewers in a baking dish so that the meat is inside and the juices flow into it, and put it in a preheated oven for 20-30 minutes.
