Potato draniki with sausage is a hearty and aromatic dish of Belarusian cuisine, rooted in traditional deruny. They combine the crispy crust of potato pancakes with the rich flavor of sausage, creating a wonderful dish for breakfast or lunch. Potatoes give draniki a tender texture, while the addition of garlic and onion makes them more piquant. Fried to a golden crust in hot oil, they acquire an appetizing appearance and rich taste. Serving with herbs and sour cream sauce adds even more harmony to the dish, making it especially tasty and homely. Draniki can be served as a standalone dish or as a great side to meat or vegetable dishes.

1
Onion and garlic are washed, peeled, and carefully chopped into small cubes.
- Onion: 2 pieces
- Garlic: 3 cloves
2
I recommend cutting the sausage into thin strips (though any other shape is fine, as long as it's small enough).
- Boiled sausage: 250 g
3
Potatoes are also washed, peeled, and grated on a coarse grater or passed through a meat grinder.
- Potato: 10 pieces
4
Add garlic, flour, sausage, onion to the potatoes, and season with salt and pepper to taste. Then mix everything thoroughly.
- Garlic: 3 cloves
- Wheat flour: 2 tablespoons
- Boiled sausage: 250 g
- Onion: 2 pieces
- Salt: to taste
5
Fry potato pancakes in well-heated oil until golden brown.
- Olive oil: 5 tablespoon

Serve the draniki hot, garnished with herbs and sour cream sauce (sour cream can be replaced with mayonnaise or any other store-bought sauce if desired).
