Heat oil in a pan and add finely chopped onion. Fry for 2 minutes until golden.

Reduce the heat and add tomatoes, lemon zest and juice, pepper, salt, and other spices. Simmer on low heat for 5 minutes.

Transfer half of the sauce to another container. Spread the remaining mass on the bottom and place 0.5 zucchini on top. Season with salt and pepper, then add a little sauce on top. Finally, layer the remaining zucchini and sauce.

Cover with foil and place in the oven for 45 minutes. The temperature should be around 180 degrees. Stir and put back in the oven for another 20 minutes. Before serving, sprinkle with chopped parsley.
