Wash the beef, cut it into pieces, do not measure with a ruler.

In a heated cast iron skillet (sauté pan, duck, as you like) with vegetable oil, place the meat and fry until slightly browned.

While the meat is frying, slice the onion into feathers.

Preheat the oven to 200 degrees.

Place the roasted meat on something with holes so that the broth remains in the pan, and immediately cover tightly or wrap in foil (the meat, not the pan). Send the meat to the oven.

Pour olive oil into the pot with broth, add onion, and sauté until translucent for about 5 minutes.

After adding soy sauce, balsamic vinegar, diced tomato, cumin, rosemary, coriander, bay leaf, clove (oregano and pepper can also be added), mix, add a glass of boiled water and cane sugar.
- Soy sauce: 4 tablespoons
- Modena Balsamic Vinegar: 6 tablespoons
- Tomatoes: 1 piece
- Cumin seeds (jeera): pinch
- Fresh rosemary: pinch
- Coriander seeds: pinch
- Bay leaf: 2 pieces
- Carnation: 2 pieces
- Water: 1 glass
- Cane sugar: 1 tablespoon

Bring to a boil, remove from heat, add basil stems and a few leaves, and if desired, garlic (can be added whole), salt to taste.
