For the sauce, finely chop the onion and garlic, mix with ketchup, maple syrup, lime juice, salt, paprika, mustard, starch, powdered sugar, water or wine.
- Onion: 1 head
- Garlic: 3 cloves
- Ketchup: 150 g
- Maple syrup: 100 ml
- Lime juice: to taste
- Salt: to taste
- Ground paprika: to taste
- Dry mustard: to taste
- Potato starch: 1 teaspoon
- Water: 1 tablespoon
- Powdered sugar: 1 teaspoon

Cook on low heat, stirring constantly, for 15 minutes.

Place the ribs in the oven at 200 degrees for 30 minutes, then remove, brush with sauce, and put back for another 30 minutes. In the last 5 minutes, increase the heat to create a crust.
