Barcesso pork is a refined dish of Italian cuisine that combines the rich flavor of marinated meat with delicate spices. The origins of this recipe trace back to Tuscan traditions, where the skillful combination of soy sauce, red wine vinegar, and aromatic seasonings gives the meat a special depth of flavor. Prolonged marination allows the pork to absorb a rich bouquet of spices, while braising in its own marinade makes the texture surprisingly tender and juicy. It is recommended to serve with mashed potatoes or spaghetti to highlight the harmony of flavors and complement Italian gastronomic aesthetics.

We marinate the pork. It's best to coat each piece separately with sauce, vinegar, and salt with spices. We place it in a large bowl. We slice 1 onion into rings and distribute it between the pieces of pork. We leave it in the refrigerator for 7-8 hours (it marinates better if left overnight).
- Pork chops: 2 pieces
- Dark soy sauce: 1 tablespoon
- Sweet and sour sauce: 0.5 tablespoon
- Ground red pepper: to taste
- Yellow curry powder: 1 teaspoon
- Onion: 2 heads
- Salt: to taste
- Red wine vinegar: 1.5 tablespoon

Heat the pan, add chopped onion to it, and take the pork out of the fridge. Place the pieces in the pan. Pour the marinade over it with the onion. Fry the pork for about 10-15 minutes, then add 1 cup of water. Simmer for another 30-40 minutes until done, remembering to turn the pieces to prevent burning.
