Baked turkey with vegetables in fish sauce marinade is a unique dish with a delicate balance of flavors. The fish sauce used in the marinade adds rich umami notes to the turkey meat, while turmeric gives a slight spiciness and golden hue. Fragrant rosemary enhances the depth of flavor, and celery root brings fresh, herbal accents. This dish is perfect for festive tables and cozy family dinners as it combines simplicity in preparation with a richness of gastronomic sensations. Baking under foil preserves the juiciness of the meat, making it tender and aromatic. Inspired by American cuisine, it recalls traditional turkey cooking methods but with unexpected Asian notes thanks to the fish sauce. It can be served with baked vegetables or a light salad to highlight its richness and complexity.

For the marinade, mix fish sauce, turmeric, and any herbs you like. I use dried rosemary, sometimes basil. No need to add salt as both sauces have enough.
