Nigella Lawson's fish pie is an exquisite dish of European cuisine, infused with the warmth of home. Its history is rooted in English traditions, where fish pies symbolized comfort and family dinners. Tender pieces of fish cooked in fragrant milk with bay leaves and spices combine with a velvety sauce made from flour, butter, and cheddar cheese. The base is a light mashed potato enriched with creamy butter. A harmonious balance of flavors: creamy tenderness, a hint of smokiness from the smoked haddock, and a fresh note of green peas. This dish is perfect for both everyday lunches and festive dinners, offering delight in every bite.

Gradually pour the remaining fish milk into the mixture of oil and flour. Place on medium heat and bring to a boil, stirring constantly until the sauce thickens. Sprinkle with most of the grated cheese (leave some to sprinkle on top of the pie) and peas.
