Baked pork stuffed with apples

Roasted pork stuffed with apples is a dish with a rich history rooted in European culinary traditions. The combination of tender meat and fruity acidity creates an extraordinarily harmonious flavor. Mustard adds spiciness, while baking in foil preserves juiciness. This dish is perfect for festive tables, especially in winter when the aroma of roasted meat fills the home with coziness. It pairs ideally with mashed potatoes or fresh vegetables, as well as a glass of red wine. It not only delights gastronomic senses but also symbolizes family traditions when food brings people together at one table.

1
Coat the pork (I had a shoulder, but ideally, a carbonade would work) with mustard and refrigerate for at least an hour. Then, make cuts with a fillet knife and insert a piece of peeled apple into each pocket.
- Pork: 300 g
- Mustard: 4 tablespoons
- Apple: 0.5 piece
2
Wrap in foil and bake in the oven at 200 degrees for 40 minutes; in an air grill at 220 degrees for 1 hour.
