Gratini (salmon rolls with shrimp and cheese, baked in the oven)

We take salmon fillet (the salmon should be slightly frozen) and cut it at an angle into 8 fillets of 2.5–3 cm thickness. Then we pound each piece. Each roll will consist of two salmon fillets. We place one piece on top of the other overlapping by about 4–5 cm. We get a long piece of fillet and sprinkle it with fish spices.
- Salmon: 600 g
- Seasoning for fish: 4 g

Then take the shrimp and cut them in half. Place 2 shrimp on each roll. Lay them at the end of the roll where you will start rolling it.
- Peeled boiled shrimps: 12 pieces

Grate the cheese on a coarse grater, add mayonnaise and finely chopped dill. Mix and form a ball in your palm (it should be neither too small nor too big), place it on the salmon next to the shrimp.
- Dutch cheese: 100 g
- Mayonnaise: 40 g
- Dill: 0.5 bunch

Then take the end where you placed the cheese and shrimp, and start rolling it up. After rolling, shape it in your hand like a barrel so that the bottom seals and the cheese doesn't leak, while the top should remain open.

After that, place on a baking sheet lightly greased with oil. Top with one shrimp cut in half but not all the way through to fan it out, and sprinkle a little cheese (grated finely) on top; you can also drizzle a bit of olive oil over it.

Place in a preheated oven at 160–170 degrees for 15–20 minutes.
