Heat the butter in a pan over medium heat. Add flour and dry mustard.
- Butter: 60 g
- Wheat flour: 2 tablespoons
- Dry mustard: 1 teaspoon

Sauté for 2 minutes while stirring. Gradually add broth, stirring constantly until it comes to a boil. Cook for a couple more minutes. Add sour cream, remove from heat and set aside.
- Bouillon: 1 glass
- Sour cream: 2.5 tablespoons

Fry the finely chopped onion in the remaining oil until lightly golden. Increase the heat, add the meat cut into 3x1 cm strips, and fry until golden brown. Reduce the heat to low, add the sauce, and season with salt and pepper to taste. Cover and cook for about 20 minutes.

- Beef: 700 g

Meanwhile, cut the potatoes into thin strips. Heat oil for frying in a deep pan and fry the potatoes. Place the potatoes on paper towels and season with salt to taste while still hot.
- Potato: 4 pieces
- Vegetable oil: 300 ml
- Salt: to taste

Serve the beef stroganoff on a plate and sprinkle with potato sticks on top. Garnish with parsley.
