Meatballs in sour kefir sauce are a cozy and homely dish that combines the tenderness of meatballs with the light tang of kefir. These meatballs may have European roots, but their popularity has spread across various cuisines. The kefir sauce makes them incredibly soft, soaking each piece with a creamy-tart flavor. This dish pairs perfectly with sides like mashed potatoes or rice, creating a harmony of textures and flavors. Its simplicity makes it suitable for family dinners or cozy evenings with loved ones. Meatballs fried to a golden crust are then simmered in kefir, making them juicy and rich. The light tang refreshes the taste while spices add zest. Such a dish warms and delights with its simplicity and depth of flavor.

1
Mix the minced meat with egg, salt, and pepper. You can add any spices you like to taste.
- Ground beef: 400 g
- Chicken egg: 1 piece
- Salt: to taste
- Ground black pepper: to taste
2
Make small meatballs.
3
Heat vegetable oil in a pan. Quickly fry the meatballs until golden brown.
- Vegetable oil: 3 tablespoons
4
Reduce the heat, pour in the kefir; you may need a little less kefir depending on whether you want the sauce thicker or thinner. Simmer covered on low heat, stirring occasionally, until the meat is cooked. About 20-25 minutes (depends on the size of the meatballs - mine were very small).
- Kefir: 0.4 l
