Prepare the chicken. Cut off the upper, meatier segments from the wings. You can also use the second segment. The tips of the wings are not suitable for roasting; it's better to use them in broth.

Mix soy sauce, minced garlic, chili, ginger, and 2 tablespoons of water in a food processor until smooth. Transfer the mixture to a large bowl and stir in flour, starch, paprika, egg, and salt. Place the chicken in the marinade and gently mix to ensure all wings are evenly coated. Cover with plastic wrap and let sit at room temperature for 1 hour, or in the refrigerator for 4 hours.

- Garlic: 6 cloves
- Fresh chili peppers: 1 piece
- Fresh ginger: 20 g
- Wheat flour: 0.5 glass
- Cornstarch: 0.3 glass
- Sweet paprika: 1 tablespoon
- Chicken egg: 1 piece
- Salt: to taste

Pour oil into a deep pan (about 5 cm high) and heat it up. Fry the wings in batches until golden brown for about 7 minutes. Using a slotted spoon, place the chicken on paper towels to remove excess oil. Serve with any sauce of your choice.
