Pork baked in a harmonica style with potato mushrooms is a true gastronomic symphony of Russian cuisine. This recipe combines juicy pork infused with the aromas of garlic and spices with the tender texture of baked vegetables. The 'harmonica' of meat filled with tomatoes and cheese becomes surprisingly juicy and gains a rich flavor when baked. Potato mushrooms not only visually complement the dish but also add a light crunch and a special herbal aroma. This treat is perfect for family gatherings, especially in cold weather when you crave something hearty and warming. Such a combination of simple ingredients transforms into a culinary masterpiece that delights both in taste and appearance.

1
Cut the cheese into slices 3-4 mm thick. Slice the tomatoes into rounds. Slice the garlic.
- Cheese: 200 g
- Tomatoes: 2 pieces
- Garlic: 3 cloves
2
Make cuts in the pork piece about 1 cm apart (not going all the way through). Season the pork with salt and pepper (inside the cuts too). Place a slice of cheese, a slice of tomato, and garlic in the cuts.
- Pork: 500 g
- Salt: to taste
- Ground black pepper: to taste
3
Wrap the pork in foil, place it on a baking tray, and put it in the oven. Bake at 180 degrees for 1 hour.
- Pork: 500 g
4
For mushrooms, it's better to take small potatoes, wash them thoroughly, and dry them. Make a deep circular cut around the middle of the potato. One part with the skin will be the cap, and the other part should be shaped like a stem by cutting off the excess.
- Potato: 5 piece
5
Brush the mushrooms with vegetable oil and salt. For effect, you can coat the mushroom stems in some dry herbs (khmeli-suneli, Italian herbs) and bake in the oven.
- Salt: to taste
