First, we will prepare homemade noodles. For this, take one egg and break it into a wide, deep bowl. Add about half a cup of flour directly to the egg. Mix the flour and egg with a spoon at first. It results in a runny and very sticky dough. Gradually add flour in small portions as the dough thickens, you can start kneading it by hand.

Knead the dough thoroughly to make it uniform. When the noodle dough is ready, roll it out into a thin pancake. For this, sprinkle flour on the table and roll out the dough with a rolling pin. The thickness of the 'pancake' should be 1–1.5 mm. Now cut the pancake into noodles. First, cut it into wide strips. Then I cut each strip into thin noodles.

The cut homemade noodles need to be dried. For this, flour should be sprinkled on a baking sheet.

And spread the noodles in a thin layer on the tray. You can leave it to dry simply in the kitchen. I dry homemade noodles in the oven on ventilation mode without heating. At the same time, I keep the door slightly open. Usually, noodles made from one egg are enough to feed 4 people.

To prepare homemade chicken noodles, you need to boil chicken broth. Pour the required amount of ready chicken broth into a pot. When the broth boils, add a little salt. Use less salt than usual, as chicken broth can easily become too salty.

Cook homemade noodles in broth. Boil the noodles for 10-15 minutes. If you used only eggs in the noodle recipe without water, the noodles won't overcook. No spices are needed. You can add chicken meat to the noodles.
