Cut the beef into thin slices, place each slice in a plastic bag and pound to reduce thickness by half. Then rub the meat with salt and lightly dust with flour. Fry in a pan greased with melted butter on both sides until golden brown.
- Beef: 700 g

- Wheat flour: 1 tablespoon

Grind the dry bread in a blender or grate it. Fry the onion in melted butter until soft. Mix the bread, onion, and pepper.

Layer meat and onion in a ceramic dish. Pour miso or beef broth over it all.

Cover with a lid and place in the oven for 2.5 hours. Cook for 1.5 hours at 180 degrees and the remaining hour at 150 degrees.
