Preheat the oven to 230 degrees.

Cut off the dark green leaves and roots of the leek. Cut the remaining parts lengthwise into 4 pieces, then crosswise in half. Place on a baking sheet and mix with olive oil. Season with salt and pepper and bake in the oven for 12-15 minutes until the leek is slightly soft.

- Extra virgin olive oil: 2 tablespoons
- Coarse salt: to taste

Remove the baking tray from the oven and stir, pushing it to the edge. Place the salmon fillet cut into large pieces in the center, season with salt and pepper.
