Peel the apples and remove the core, then cut them into small cubes.

Preheat the oven to 200 degrees.

Heat 2 tablespoons of olive oil in a fireproof skillet over medium heat.
- Extra virgin olive oil: 4 tablespoons

Rub the chops with salt and pepper and place them in the pan. Fry for 2 minutes on each side until golden brown. Then send to the oven until cooked for about 5 minutes, transfer to a plate.
- Coarse salt: to taste
- Freshly ground black pepper: to taste

Meanwhile, heat the remaining olive oil in a saucepan over medium heat. Add the finely chopped onion and sauté until translucent and golden, about 6 minutes. Add the apples and sauté for another 4 minutes. Then add the vinegar, raisins, ginger, mustard, and cayenne pepper. Mix well and cover. Cook for another 3 minutes, stirring occasionally, until the apples are soft. Season with salt and pepper and serve over the meat.
